Herb Roasted Pork Loin with Fig/Apple Compote

3 TBSP brown sugar
1 tsp. garlic powder
1 tsp. ground cumin
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. fresh ground black pepper
1/4 tsp. ground cardamom
1/4 tsp. ground fennel

1 (3 lb.) pork loin, trimmed
PAM Cooking Spray
2 cups dried figs, halved lengthwise
2 cups dried apples
1/4 cup minced crystallized ginger
3/4 cup pear nectar
1 (14 oz) can fat free, chicken broth

Preheat oven to 400
Combine first 9 ingredients in a small bowl. Rub mixture over surface of roast and place in a shallow roasting pan coated with PAM. Place figs, apples, and crystallized ginger around roast. Pour 3/4 cup nectar and broth over fruit. Bake for 1 hour and 10 min or till thermometer registers 145 degrees, stirring fruit frequently. Remove from oven. Place roast on carving board and fruit in bowl using slotted spoon.

Sauce Ingredients:
1/2 cup pear nectar
1/2 cup port or Black Cherry juice
2 TBSP currant jelly
1/4 cup heavy cream
Sauce Process:
Pour pan juices in to a saucepan. Add 1/2 cup pear nectar, port or juice, and jelly. Bring to a boil
Cook 4 min. or till thick enough to lightly coat the back of a spoon. Stir in heavy cream and simmer for 2 min. stirring often.
Serve sliced roast on a platter with fruit arranged around it.
Pass sauce in a gravy boat.

Gloria's Chicken Marinade

(Enough for about 2 lbs. chicken)

1/2 cup lite soy sauce (I use Braggs because it is very low in sodium)
1/3 cup extra virgin olive oil
1/4 cup honey

Blend very well. Put chicken and marinade in zip lock bag. Marinate overnight or several hours.

This simple marinade is just delicious. It makes a rich, salty/sweet flavored meat.

Gloria's Herb Roasted Potatoes

SMALL thin skinned potatoes such fingerlings, red, gold "yukon" or purple potatoes.
Don't use Russets. It's not the same.
Sea Salt
Italian Herb mix
PAM

Pre-heat toaster oven (or regular oven) to 450 degrees. Wash potatoes. Prepare a tray with PAM spray. Place potatoes on tray. Spray potatoes generously with PAM. Sprinkle Sea Salt and Italian herbs generously on potatoes. Bake about 15 min. Check for doneness.

Charles said these are the best tasting potatoes he has ever had and that man has eaten in some mighty fine restaurants! I was blushing from the praise!

Whole Wheat Bread (I found the recipe on line and made it today. It is moist and wonderful!)

2 cups warm water
2 TBSP milk
1/4 cup oil
1/4 cup honey
1/4 cup brown sugar
2 tsp. salt
3 cups all purpose flour
3 cups whole wheat flour
4 tsp. instant active dry yeast

Mix first 6 ingredients and then add yeast and flour. Knead till smooth and elastic. Place in greased bowl. Raise till double. Place in greased bread pans. Raise again till double. Bake 30-35 min. at 350
